White Bottom Cupcakes

Ingredients

  • 1 (8 ounce) package cream cheese, softened
  • 1 egg
  • 1/3 cup white sugar
  • 1/8 teaspoon salt
  • 1 cup white chocolate chips (preferably Ghirardelli)
  • 1 1/2 cups all-purpose flour
  • 1 cup white sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup water
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract

Method

  1. Heat your oven to 350 degrees F (175 degrees C). Place paper liners in your muffin tins.
  2. Using a medium bowl, combine the softened cream cheese, egg, 1/3 cup white sugar and 1/8 teaspoon salt, beating until fluffy. Fold in the white chocolate chips and set this mixture aside.
  3. In a separate large bowl, combine the all-purpose flour, 1 cup white sugar, baking soda and 1/2 teaspoon salt. Create a hollow in the middle and pour in the water, vegetable oil and vanilla extract. Mix everything until it is fully combined.
  4. Spoon the batter into the prepared muffin cups, filling each one about one third full. Add a tablespoon of the reserved cream cheese mixture on top of each.
  5. Place the tins in the preheated oven and bake for 25 to 30 minutes.
