1 Pound Gluten Free Lasagna
Created to satisfy a craving for a classic dish without gluten, this lasagna uses rice noodles for a pleasing texture. Layers of seasoned beef, cottage cheese, mozzarella, zucchini and marinara sauce bake together into a hearty and comforting meal. It is designed to be very filling and uses accessible gluten free products.
Ingredients
- 10 ounces lasagna noodles, gluten free
- 1 lb ground beef, browned
- 1 lb cottage cheese, fat free
- 1 lb mozzarella cheese
- 1 tablespoon italian seasoning
- 2 teaspoons garlic, minced
- 1 (14 ounce) jar marinara sauce, it has less carbs per serving (ragu old world style)
- 1 lb zucchini, peeled and sliced
Method
- Cook the lasagna noodles following the directions provided on the packaging.
- Cook the ground beef with the Italian seasoning and minced garlic until browned.
- Arrange a single layer of the cooked noodles in your baking dish.
- Add layers of the browned beef, mozzarella cheese, cottage cheese, sliced zucchini and marinara sauce over the noodles.
- Continue building these layers until all your components are used.
- Place a sheet of foil over the dish to protect the top layer during baking.
- Bake the lasagna at 350 degrees for 30 minutes, until it is hot and bubbling.
- Take off the foil and return the dish to the oven for 10 minutes to lightly brown the top.
- Allow the lasagna to rest for 10 minutes before serving so it can set properly.
