Giant Reese's Pieces Peanut Butter Cookie
This recipe creates one enormous, bakery-style cookie packed with creamy peanut butter, Reese's Pieces, and chocolate chips. It's a simple, single-serving dessert that bakes up with a soft centre and lightly browned edges. The dough comes together quickly with basic ingredients, and the finished cookie can be customised with extra toppings. Perfect for satisfying a specific sweet craving without making a whole batch.
Ingredients
- 2 Tablespoons (28g) unsalted butter, softened to room temperature
- 2 Tablespoons (25g) granulated sugar
- 2 Tablespoons (25g) packed light or dark brown sugar
- 2 Tablespoons (30ml) beaten egg (crack an egg, beat it, then use 2 Tbsp)
- 1/2 teaspoon pure vanilla extract
- 2 Tablespoons (31g) creamy peanut butter
- 1/2 cup (62g) all-purpose flour (spooned & leveled)
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup (48g) Reese’s Pieces
- 1/4 cup (45g) semi-sweet chocolate chips
Method
- Set your oven to 350°F (177°C). Prepare a large baking sheet by lining it with parchment paper or a silicone mat.
- In a large bowl, use a handheld or stand mixer with a paddle to combine the softened butter, granulated sugar, and brown sugar until creamy. Mix in the 2 Tablespoons of beaten egg, vanilla extract, and peanut butter until fully incorporated. Scrape the bowl's sides. On a low setting, mix in the flour, baking soda, and salt, then fold in the 1/4 cup of Reese’s Pieces and chocolate chips.
- Use a large spoon to form the sticky dough into a tall, round ball on your prepared sheet. You can press a few extra Reese’s Pieces into the top before it goes into the oven.
- Bake the cookie for 19-22 minutes, until the edges show a light brown colour. The middle may look soft but will firm up as it cools.
- Allow the giant cookie to cool on the baking sheet for 10 minutes. If you like, press additional Reese’s Pieces or chocolate chips into the top for garnish. It can be frozen for up to 3 months and thawed at room temperature.
