1 Bowl Baked Oatmeal
This American breakfast dish brings together straightforward ingredients for a comforting meal. It offers a texture reminiscent of bread pudding, being both creamy and chewy. You can prepare it in advance and enjoy portions throughout the week. The recipe is easily adaptable for various dietary needs and flavour choices.
Ingredients
- 1 and 3/4 cups (420ml) milk (dairy or nondairy)
- 2 large eggs*
- 1/2 cup (120ml) pure maple syrup*
- 1/4 cup (4 Tbsp; 56g) unsalted butter, melted and slightly cooled*
- 1/4 cup (60g) unsweetened applesauce or mashed banana
- 3 cups (255g) old-fashioned whole rolled oats*
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon salt
- 1 and 1/2 cups (225g) fresh or frozen mixed berries, (do not thaw)
- optional for topping: 1/2 cup chopped walnuts or pecans
Method
- Position your oven rack in the lower third and heat the oven to 350°F (177°C). Use nonstick spray to grease a 9×9 inch square pan or an 11×7 inch rectangle pan. A dish holding about 3 quarts is suitable, but an 8×8 inch pan is too small. Refer to the recipe note for using a 9×13 inch pan.
- Combine every ingredient in one large bowl using a whisk. Transfer this mixture into your prepared pan. Add chopped nuts on top now if you like, or mix them into the batter.
- Place the pan in the oven and bake for 35 minutes. The centre should look almost set for a soft result. Bake until the centre is fully set if you prefer a drier, firmer texture.
- Allow the baked oatmeal to cool for 5 minutes. You can then spoon it out or cut it into slices. Serve with yogurt if you wish. Store any remaining portions in a sealed container in the fridge for up to 1 week.
