1-2-3 Peach Cobbler
This straightforward cobbler features a sweet, spiced peach filling thickened with cornstarch and peach nectar. A simple batter made from pancake mix, flour and sugar is spooned over the hot fruit before baking. The dessert is finished with a nutmeg and brown sugar sprinkle, then cooled and cut into portions. It yields 8 squares and is ready in about 25 minutes.
Ingredients
- 1/2 teaspoon cinnamon, ground
- 1 tablespoon vanilla extract
- 2 tablespoons cornstarch
- 1 cup peach nectar
- 1/4 cup pineapple juice (can use juice reserved from canned peaches) or 1/4 cup peach juice (can use juice reserved from canned peaches)
- 2 (16 ounce) cans peaches, sliced, packed in juice, drained (or 1-3/4 lbs)
- 1 tablespoon margarine, tub
- nonstick cooking spray (for baking dish)
- 1 cup pancake mix, dry
- 2/3 cup all-purpose flour
- 1/2 cup sugar
- 2/3 cup evaporated skim milk
- 1/2 teaspoon nutmeg
- 1 tablespoon brown sugar
Method
- Place the cinnamon, vanilla, cornstarch, peach nectar and pineapple or peach juice into a saucepan.
- Keep stirring the contents until they thicken and begin to bubble.
- Mix in the drained, sliced peaches.
- Lower the heat and let the mixture simmer for 5 to 10 minutes.
- Melt the margarine in a separate saucepan, then set it aside.
- Use cooking oil spray to lightly coat an 8-inch square glass dish.
- Transfer the hot peach filling into the prepared dish.
- In a different bowl, mix together the dry pancake mix, flour, sugar and the melted margarine.
- Pour in the evaporated skim milk and stir to combine.
- Immediately dollop the batter over the surface of the peach mixture.
- Mix the nutmeg with the brown sugar.
- Scatter this sugar mixture evenly across the top of the batter.
- Bake at 400° F for 15 to 20 minutes or until the top is golden brown.
- Allow the cobbler to cool before slicing it into 8 squares.
