1-2-3 Healthy Soup
This straightforward clear soup combines soybeans, broccoli, red potatoes, and green cabbage in a chicken stock base. The ingredients are simmered together before the broth is blended for a smooth finish. It's a wholesome dish that comes together in about 25 minutes, yielding 2-4 servings. Ingredients
- 1 cup soybeans
- 4 cups chicken stock
- 2 cups broccoli (thawed)
- 3 red potatoes (cleaned)
- 1/2 head green cabbage (sliced)

Method
- Cook the soybeans in the chicken stock according to the package directions.
- After the beans are cooked, put all the remaining ingredients into the broth and simmer for 15-20 minutes, or until the potatoes are tender.
