1-2-3! Extreme Barbecue Sauce
This distinctive barbecue sauce is deep black in colour and delivers a powerful, sweet heat. It uses only three core ingredients to create a complex glaze perfect for roasting meats. The recipe includes several quick variations to tailor the flavour profile, offering ideas for Asian-inspired, sweeter, or more traditional tomato-based finishes. It cooks in just 5 minutes before being used to baste your chosen protein.
Ingredients
- 1/2 cup beer
- 3/4 cup thick soy sauce (such as ABC Sweet Soy Sauce)
- 1/4 cup red hot pepper sauce (more or less to taste)
Method
- Cook your selected meat until it develops caramelised patches.
- Take the meat out and pour beer into the pan, loosening the browned bits from the bottom.
- Mix in the hot sauce and thick soy sauce. If the mixture seems overly thick, a little water can be introduced. Sampling it now will help you judge the sweet and hot balance. The sauce will reduce to become thicker and more intense.
- Drizzle the sauce over the meat. Transfer the roasting pan to an oven set to 350 degrees and cook until the meat is ready and the sauce is rich and glossy.
- Please note, this sauce may be too strong for younger palates.
- For variations:
- Incorporate fresh ginger and 5 Spice powder to create an Asian flavour, ideal for spare ribs or chicken wings.
- A combination of honey and lemon juice yields a sweeter, brighter taste, excellent with pork loin or chops.
- Mix in ketchup, mustard, and worcestershire for a classic tomato-based barbecue sauce suitable for many dishes.
- Stir through caramelised onions or roasted garlic to enhance texture and depth, particularly good with boneless chicken breasts.
