This is a wonderfully versatile and straightforward quiche foundation. You can personalise it with a variety of your favourite additions. The process is simple, involving a savoury egg custard baked within a pastry case until perfectly set. It yields a satisfying dish ideal for a morning meal.

Basic Quiche

Ingredients

  • 1/2 cup finely chopped yellow onion
  • olive oil
  • 3 eggs, lightly beaten
  • 3/4 cup milk
  • 1/2 teaspoon Dijon mustard
  • salt, to taste
  • ground black pepper, to taste
  • 1 cup shredded swiss cheese or 1 cup sharp cheddar cheese
  • 9 inches unbaked pie shells

Method

  1. Set your oven to heat to 375 degrees. Cook the finely chopped yellow onion in a small skillet with a little olive oil until it softens, then allow it to cool.
  2. Combine the lightly beaten eggs, milk, Dijon mustard, salt, ground black pepper, shredded cheese, and the cooled onions in a medium bowl. Transfer this mixture into the unbaked pie shell. Place it in the oven and bake for 40 to 50 minutes, or until a knife inserted into the middle comes out clean.
