This is a treasured family recipe for a simple yet delicious orange cake. It uses a straightforward method of creaming butter and sugar, then incorporating eggs, dry ingredients, and orange juice. Ingredients

  • 1 cup butter or 1 cup margarine
  • 2 cups sugar
  • 4 eggs
  • 3 cups all-purpose flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
  • 1 cup orange juice
  • 1 cup raisins

Method

  1. Cover the raisins with boiling water and allow them to soak while you mix the other ingredients.
  2. Cream the butter with the sugar until light, then beat in the eggs one at a time.
  3. Sift the flour, cream of tartar and baking soda together. Add these dry ingredients to the creamed mixture alternately with the orange juice and vanilla. Drain the soaked raisins and fold them into the batter.
  4. Transfer the batter into a buttered and floured 9x13 inch pan or divide it between two prepared 9-inch round cake tins.
  5. Bake at 350 F for 45 minutes if using the large pan, or for 30 minutes for the layer pans. Check the cake is cooked through before removing it from the oven.
  6. This cake is delicious plain. You can also ice it or serve slices with fresh berries and a dollop of whipped cream.
