This is a cherished family recipe for delightful bar cookies. The method involves creating a rich, buttery dough that is divided to sandwich a layer of your chosen pie filling. After baking, the bars are finished with a drizzled vanilla glaze. You can personalise them with any variety of canned pie filling or prepared fresh or dried fruit. Ingredients

  • 1 cup butter
  • 2 cups sugar
  • 3 cups flour
  • 4 eggs
  • 1 teaspoon vanilla
  • 1 teaspoon almond extract
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 (21 ounce) can pie filling
  • 1 cup confectioners' sugar
  • 1 tablespoon soft butter
  • 1 1/2 tablespoons milk
  • 1/4 teaspoon vanilla

Method

  1. Cream the butter until smooth.
  2. Gradually incorporate the sugar, beating the mixture thoroughly.
  3. Beat in the vanilla and almond extract, then add the eggs one by one, mixing well after each addition.
  4. Sift the flour together with the baking powder and salt.
  5. Add the sifted dry ingredients to the butter mixture and beat until fully combined.
  6. Prepare a 10" x 15" jelly roll pan by greasing and flouring it.
  7. Separate the dough into three equal portions.
  8. Roll out two-thirds of the dough and carefully place it into the prepared pan.
  9. Evenly spread the pie filling over the dough layer in the pan.
  10. Roll out the final third of dough, place it over the filling, and seal the edges by crimping or fluting.
  11. If rolling proves tricky, you can press the bottom layer into the pan and press the top layer out on waxed paper to a 10" x 15" rectangle before transferring it.
  12. Bake at 350 degrees for 45 minutes.
  13. Combine all the glaze ingredients to create a thin, pourable consistency.
  14. Drizzle the glaze over the bars once they have cooled completely, then cut into squares.
