1,001 Nights Cake
This Arabian dessert is a quick and delightful treat. It features a soft, buttery cake base topped with a rich, chewy confection made from butter, sugar, honey, slivered almonds and cinnamon. The result is a wonderfully caramelised and toothsome finish, reminiscent of a pecan pie but with its own unique character. It is straightforward to prepare and bakes in under an hour.
Ingredients
- 5 tablespoons butter
- 3 eggs
- 1/2 cup sugar
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/2 cup flour, plus
- 1 tablespoon flour
- 1/2 cup butter
- 1/2 cup sugar
- 1/3 cup honey
- 1/2 cup slivered almonds
- 1/2 teaspoon cinnamon
Method
- Grease an 8x8 inch square glass baking dish with butter.
- Heat your oven to 400 degrees F.
- Whisk the eggs, sugar and vanilla together until the mixture lightens in colour, then incorporate the melted butter.
- Mix the flour and baking powder together, then fold this gently but completely into the egg mixture.
- Transfer the batter to the prepared dish and bake for 12 minutes.
- While the cake bakes, make the topping by melting the butter in a small pan, then stirring in the sugar, honey, almonds and cinnamon.
- Bring the mixture to a boil, stirring all the while until it thickens slightly. No specific temperature is required.
- Once the 12 minutes are up, remove the cake from the oven. It will have a custard-like appearance. Carefully pour the hot topping over it.
- Place the cake back in the oven and continue baking for a further 15 to 20 minutes.
